SNOWMAN CUPCAKES

"Gooey and delicious... the perfect Christmas treat"

INGREDIENTS

For the cakes:

  • 225g Unsalted Butter

  • 225g Caster Sugar

  • 4 Eggs

  • 225g Self-Raising Flour

  • Optional: Marshmallow Food Flavouring

For the decoration:

  • 1 bag white marshmallows

  • Red, black and orange writing icing

  • Strawberry laces

  • Silver balls

EQUIPMENT

  • Mixing Bowl

  • Wooden Spoon

  • Microwaveable Bowl

  • Cupcake tray

  • Cupcake cases

METHOD

 

  1. Preheat the oven to 180 degrees Celsius
     

  2. Put the butter and sugar in a mixing bowl and beat them together until the mixture is smooth and creamy.
     

  3. Crack one egg into the bowl and a quarter of the flour. Beat with a wooden spoon until it’s fully mixed in.
     

  4. Repeat step 2 until all of the eggs and flour have been used up.
     

  5. If you are using the marshmallow flavouring, add a few drops to the mixture and stir it in well.
     

  6. Spoon the mixture out into your paper cases and fill to about 1cm from the top.
     

  7. Put them in the oven for about 20 minutes, checking on them occasionally. You can tell when they are ready because they will be golden on top and when you poke a knife through the centre, the knife will come out clean.
     

  8. Once your cakes are out, level them off by using a knife to cut the top off.
     

  9. Put all, except 12, marshmallows in a microwaveable bowl.
     

  10. Microwave them for 1 minute on full power, until melted. You need to work quickly at this point, to stop the marshmallow cooling back down.
     

  11. Use a spoon to put a dollop of melted marshmallow on top of the cake (this works best when the cake is still a little bit warm).
     

  12. Spread the marshmallow out, until the entire cake is covered.
     

  13. Repeat steps 11-12 with all the cakes. You can give the marshmallow another blast in the microwave if they need re-melting.
     

  14. When all the cakes are covered in marshmallow, you can start decorating the snowman’s head. Take a marshmallow and, using writing icing, put two black dots on for eyes, an orange triangle for its nose and a big red smile.
     

  15. Put the heads on the middle of the cakes and then wrap a strawberry lace around the base to create its scarf.
     

  16. Finally, use the silver balls to create little buttons.
