"I love Pumpkin Spiced Lattes, but I love these even more!"


  • 1 Pumpkin (or fresh Pumpkin seeds)

  • 1 tbsp Coconut Oil 

  • 1.5 tbsp Ground Cinnamon

  • 2 tsp Ground Nutmeg

  • 2 tsp Ground Ginger

  • 3 tsp Mixed Spice

  • 2 tbsp Maple Syrup

  • 1 tbsp Soft Brown Sugar


  • Baking Tray

  • Spatula

  • Mug


  1. Preheat the oven to 140 degrees Celsius 

  2. If your seeds are still inside your pumpkin, remove them using the steps shown here.

  3. Once you have your seeds removed and washed, pour them onto your baking tray.

  4. Melt the coconut oil in a mug in the microwave and pour it over the seeds.

  5. Sprinkle all the other ingredients over the top of the seeds and, using a spoon, mix it all up to ensure that every seed is coated.

  6. Spread the seeds evenly across the baking tray, until they are in a one-seed-thick layer.

  7. Place the seeds in the oven for 20 minutes. Remove the tray, with oven gloves, and use a spatula to move them around, before spreading them back out and putting them in the oven for another 20 minutes,

  8. When they are baked, remove them from the oven and leave out to cool. Once cooled, they are ready to eat and can be transferred into a bowl or tupperware!
